StrictHostKeyChecking=accept-new records the server's host key into ~/.ssh/known_hosts the first time you connect without asking, but still refuses to connect if the key later changes. That stops man-in-the-middle attacks from day two onward. Use it in bootstrap scripts where a trust prompt would hang automation.
